CLEAN Oatmeal Raisin Cookies

OK, I know I've been promising everyone on the challenge this recipe so here it is :) My version of a recipe from Clean Eating Magazine. The original recipe called for 1/2 cup of oil-BLECH so I omitted that and used apple sauce and peanut butter instead.

Oatmeal Cookies- adapted from Clean Eating Magazine

Nonstick Cooking Spray (I didn't use with an air bake sheet)
1/2 C. Apple Sauce
1/3 C. Natural Peanut Butter (just peanuts people!!)
1/3 C. + 2T Sucanat
1 Egg White
3/4 tsp. Vanilla
3 T. Water
2 C. Old Fashioned Oats (not quick kind)
2/3 C. Whole Wheat Flour
1/4 tsp. Sea Salt
1/2 tsp. Baking Soda
2/3 C. Raisins
1 tsp. Cinnamon

Preheat oven to 350. Grease baking sheet with cooking spray (I did not do this to mine) In a large bowl hand mix apple sauce, peanut butter and sucanat. Add egg white, vanilla and water, mix well. Add oats, flour, salt, baking soda, raisins and cinnamon, and mix until just blended to retain texture of the oats. Roll into tsp size balls and place on baking sheet. Bale for 14 minutes or until bottoms are lightly browned. (You can also add a little chopped dark chocolate or grain sweetened chocolate chips but I just made them with raisins)

The original recipe called for the dough to be dropped by the teaspoonful onto the sheets but they seemed a bit crumbly to me that way so rolling them into balls seemed to help.
