Turkey Chipotle Meatballs in Fire Roasted Tomato Sauce

 One of my all time favorites and SUPER easy to make.

Turkey Chipotle Meatballs in Fire Roasted Tomato Sauce

Ingredients-

1 lb. LEAN ground turkey breast (I get the 99%)
1/3 cup brown rice
1 egg
1 tsp Mexican oregano
1-2 TBSP Chipotle peppers in adobo sauce, finely chopped.
1 1/4 tsp dehydrated onion flakes
1 15 oz. can of fire roasted tomatoes-pureed in blender
3/4 c. low sodium chicken broth


Mix first 6 ingredients thoroughly. Shape into balls the size of a large egg. In a large skillet combine pureed tomatoes and chicken broth and bring to simmer. Add meatballs and simmer, covered for 1 hour. Turn meatballs half way through cooking time.

Garnish with a little yogurt, cilantro and minced serrano peppers if you like :-)
