OMG alert!! I just tried this recipe that my friend Leslie gave me and think I have a new BFF in the condiment world. You may want to double the batch, this is freakin GOOD.
Tomatillo Avocado Sauce
1 lb. tomatillos, husks removed, halved
1 small onion cut into large chunks
1 jalapeno, halved (if you are a spicy freak like me keep the seeds IN)
2-3 cloves of garlic, peeled
juice of 1 lime
handful of chopped cilantro (to taste, I happen to love it!)
1 avocado, peeled
Preheat oven to 400 degrees Fahrenheit.
Combine tomatillos, onion chunks, jalapeno and garlic on a baking sheet and drizzle with just a little olive oil. Mix to coat and roast in oven for about 20 minutes.
Puree vegetable mixture with the lime juice, cilantro & avocado. Enjoy n chicken, fish, veggies, beans, whatever! I promise your taste buds will be happy :-))
